This pickled red onions recipe could not be easier to make! You simply have to thinly slice one red onion, and then place it in a pickling liquid made of vinegar, sugar, salt and water. Then, let everything stand at room temperature for 1 hour. As the red onions sit in the pickling liquid, they gradually break down and turn a bright pink color! They also pick up the flavoring of the pickling liquid. (You can also re-use the pickling liquid in salad dressings, by the way! It’s onion-y and acidic, which pairs perfectly with most salads).
- 1 red onion
- ½ cup apple cider vinegar
- 1 tablespoon sugar or honey
- 1 ½ teaspoons kosher salt
- 1 cup water
- Thinly slice the red onion.
- In a medium bowl, whisk together the apple cider vinegar, sugar or honey, kosher salt, and water.
- Place the onion slices in a jar and pour over the pickling liquid mixture. Sit at room temperature for 1 hour.
